Braised Leeks with White Beans & Olive Oil

Leeks slowly softened in olive oil with white beans and Silken Garden Green. No acid, no heat, just quiet savoriness that builds as it rests.

Method

  1. Trim the root ends and dark green tops from the leeks. Slice the pale sections into thick rounds.

  2. Place the slices in a bowl of water and gently separate them to release any grit. Lift them out and drain well.

  3. Heat olive oil in a wide pan over medium-low heat.

  4. Add the Silken Garden Green and stir gently for 10 to 15 seconds. You're warming it, not browning it.

  5. Add the leeks and a pinch of salt. Turn them to coat in the oil and herbs.

  6. Cover the pan and cook slowly for 15 minutes, stirring occasionally, until the leeks are soft and silky.

  7. Add the white beans and the water or broth. Simmer uncovered for 5 minutes so everything comes together.

  8. Turn off the heat and let the pan rest for at least 5 minutes before serving. This is where the dish becomes cohesive.

Chef Notes

The flavor feels fuller after resting. The herbs taste woven into the oil and vegetables instead of sitting on top.

Variation: Replace the white beans with cooked farro or barley and add a little extra olive oil before resting. Grains absorb the herb flavor differently than beans, showing how Silken Garden Green creates cohesion even when the texture shifts.
