Cook Through the Framework
Small-group workshops in Portland where you learn the Flavor Architecture framework the way it was meant to be learned: with a pan in your hand, real ingredients in front of you, and the freedom to taste what happens when you understand why things work.
What a workshop looks like
A small group of cooks gathers around a shared kitchen. Everyone gets a station, a set of Emberloft blends, and a few ingredients. No recipes to follow. Instead, we cook through the four questions that define the Flavor Architecture framework: What are these ingredients and how do they behave? How much, relative to everything else? When do they enter the dish? What do they need beside them?
You'll bloom spices in hot oil and taste what the first 30 seconds actually do. You'll build a sauce that's intentionally out of balance, then correct it and taste the difference. You'll rest a dish and discover flavors that weren't there five minutes ago.
By the end, you won't just know what to do. You'll understand why it works. That understanding changes how you cook everything, not just the dishes we make together.
