Creamy Yogurt-Poached Chicken with Garden Green Rice

Chicken gently poached in yogurt and aromatics, served over rice infused with Silken Garden Green. The result is comforting, soft, and deeply savory without feeling heavy.

Method

  1. Rinse the rice under cold water until the water runs mostly clear, then set it aside. This keeps the finished rice from feeling sticky.

  2. In a wide saucepan, warm olive oil over medium heat. Add the sliced onion and cook until soft and translucent, about 5 minutes.

  3. Stir in 2 teaspoons of Silken Garden Green and warm it gently for about 20 seconds. You should smell the herbs bloom, not toast.

  4. Lower the heat and slowly stir in the yogurt, a little at a time, until smooth. Keeping the heat low prevents curdling.

  5. Nestle the chicken into the yogurt mixture and season lightly with salt. The yogurt should barely bubble.

  6. Cover and gently simmer for 18 to 22 minutes, turning the chicken once, until cooked through and tender.

  7. While the chicken cooks, start the rice. Heat oil or butter in a small pot over medium heat.

  8. Add the remaining 1½ teaspoons of Silken Garden Green and stir for 15 seconds to warm it.

  9. Add the rinsed rice, water or stock, and a pinch of salt. Bring to a boil, then cover and lower the heat.

  10. Simmer until the rice is tender and the liquid is absorbed, about 15 minutes.

  11. Turn off both pots and let them rest, covered, for 5 minutes before serving. This helps the flavors settle and the textures relax.

Chef Notes

The yogurt tastes savory instead of tangy, and the rice carries herb flavor evenly instead of in bursts.

Variation: Use bone-in chicken breasts or thick-cut pork chops instead of thighs, keeping the heat very low. The blend still settles into the yogurt gently, but the leaner protein makes the finished dish feel lighter and more delicate while staying fully savory.
