Savory Hearthbread Blend

Garlic-led savoriness and warm herbs, bread that smells incredible and tastes even better once cooled.

Savory Hearthbread Blend is designed for fat and dough. Mixed directly into bread dough or stirred into butter, it creates an aroma as bread bakes that draws people into the kitchen before it's out of the oven. Once cooled, that same bread tastes savory and craveable rather than sharply garlicky, because the fat has smoothed the garlic's edge, the herbs have spread through the crumb, and the sumac keeps the finish clean rather than heavy.

It works in dough, in brushing butter, in focaccia, in knots, in rolls, in breadsticks, anywhere fat and starch are involved. Cold applications don't open the herbs the same way. The flavor settles as it cools. That is when this blend shines.

How to Use Savory Hearthbread

For bread dough: add one tablespoon per pound of dough during mixing, after the salt is incorporated. The blend distributes through the crumb during rising and baking. For brushing butter: melt two tablespoons of butter, stir in one teaspoon of Savory Hearthbread, and let it sit for two minutes before brushing onto warm bread, rolls, or flatbread.

For focaccia: dimple the dough, drizzle with olive oil, scatter one to two teaspoons of Savory Hearthbread across the surface, add flaky salt, and bake. The blend will toast into the oil on the surface while the portion that sinks into the dimples steams into the crumb.

Melt butter, stir in Savory Hearthbread, brush it onto warm store-bought bread or rolls. This takes two minutes and immediately demonstrates what the blend does in a fat-and-starch context.

What to Notice

  • The kitchen aroma during baking is the blend's most dramatic moment, garlic, rosemary, and thyme opening in butter and dough. If the kitchen doesn't smell irresistible, the blend proportion may be too low.

  • Taste the bread while warm and again after it has cooled for 15 minutes. When warm, the garlic will be more forward and the herbs sharper. After cooling, the garlic settles into the fat, the herbs integrate into the crumb, and the flavor reads as savory and complete rather than sharp.

  • The finish should be clean, not heavy. The sumac in the blend is providing a subtle brightness that prevents the garlic and butter from becoming oppressive. You won't taste it as sumac. You'll notice its absence if it were removed, the bread would feel heavier.

What Savory Hearthbread Adds to Food

  • Garlic and onion that open warm and settle as the bread cools, craveable, not aggressive
  • Herbs that spread through fat and crumb without turning sharp or dusty
  • Clean, savory finish, the bread tastes more satisfying with each bite, not less

Ingredients

Salt, garlic powder, onion powder, rosemary, thyme, black pepper, sumac, sage

Works Well With

Amber Root
Amber Root

Use Amber Root to build a savory soup or stew, then serve alongside Savory Hearthbread focaccia or rolls. The warm foundation from the soup meets the herbed, garlicky bread, two expressions of savory depth from two different contexts (liquid and starch) that complement each other across the table.

Silken Garden Green
Silken Garden Green

Savory Hearthbread in the bread, Silken Garden Green in the accompanying salad dressing or grain. The garlic-herb character of the bread meets the quieter, more delicate herb character of the green blend. Two herb identities, two contexts, one cohesive meal.

The garlic in this blend is assertive, but the fat in the butter and dough rounds it, and the sumac provides a brightness that keeps it clean. That's the herb-and-grounding pair working in a fat context. Learn how balance makes assertive flavors sing rather than shout.
