Smoldering Fig Dust Butter

A restrained compound butter infused with Smoldering Fig Dust. Warm, gently sweet at first, then smoky and savory as it melts and rests on hot food.

Method

  1. Remove the butter from the refrigerator 30 to 45 minutes before starting. It should be soft enough to press easily with a finger, but still hold its shape and not look shiny or melted.

  2. Place the softened butter in a small bowl. Sprinkle the Smouldering Fig Dust over the butter.

  3. Use a spoon or spatula to mix until fully combined and evenly colored.

  4. Taste a small amount. Add a pinch of salt only if needed. The blend already carries structure.

  5. Transfer the butter to parchment or plastic wrap and shape into a log, or keep in a small covered dish.

  6. Refrigerate for at least 30 minutes to let the flavors settle before using.

Chef Notes

At first taste, the butter feels warm and lightly sweet. As it sits on hot food, smoke and savoriness come forward and linger.

Variation: Melt the butter gently and brush it over roasted vegetables or warm bread just before serving. Liquid fat carries the spice differently, making the finish feel rounder and more savory.

Storage: Keeps refrigerated for up to 2 weeks, or frozen for up to 2 months.
