Juniper Winter Blend

Evergreen, warm and grounded. Bright pine that holds its own against rich meats.

Juniper Winter is built for rich roasts. Bloomed in butter or oil before searing, it brings a bright, piney note that turns savory as it meets the fat and the crust darkens. After the meat rests, the evergreen settles into the richness. It's bright enough to stand up to lamb, venison, and duck, and grounded enough to taste like dinner.

Juniper's brightness needs fat to transform. Blooming the blend in butter or oil before searing opens the pine and lets the pepper carry it into the surface of the meat. As the crust darkens in the oven, the sharp evergreen edges round out and turn savory, with coriander and cumin holding everything to the plate. The rest finishes the job. As the juices settle back into the meat, the pine settles with them, so the last bite tastes as integrated as the first.

How to Use Juniper Winter

Primary Uses: Leg or rack of lamb; venison loin and roasts; duck breast; pork loin and pork roasts.
What to expect: Bright pine that turns savory against the fat, with a dark, well-seasoned crust.

Secondary Uses: Root vegetables roasted in the drippings; mushrooms roasted hard in oil; beef roasts.
What to expect: Evergreen warmth that reads as depth, not decoration.

Not Ideal For: Delicate fish, chicken breast, and other lean, quick-cooking cuts, where there isn't enough fat to round out the pine; cold dishes; sweet applications. Juniper Winter needs richness to push against.

Start here

The Bloom Test: Warm a spoonful of butter in a small pan. Smell the blend straight from the jar, then add a pinch to the butter and smell again after 30 seconds.

What to Notice

  • The Bloom Test: Sharp pine in the jar becomes warm and savory in the pan.

  • Rack of Lamb: The pine reads as savory depth, not as something sharp sitting on top.

  • Duck Breast: The duck fat carries the evergreen, and the brightness and richness balance each other.

  • Pork Roast on Root Vegetables: The vegetables pick up the drippings and the pine together.

What Juniper Winter Adds to Food

  • Juniper leads, with rosemary reinforcing the pine from the herb side.
  • Coriander and cumin form a warm, earthy base underneath, which keeps the evergreen from floating away on its own.
  • Black pepper carries the blend through fat and into the meat.
  • Salt seasons as it goes.

Ingredients

Juniper berry, coriander, cumin, salt, rosemary, black pepper.
